Changes in Volatile Composition of Cabernet Sauvignon (Vitis vinifera L.) Grapes under Leaf Removal Treatment

Several studies have revealed that fruit-zone leaf removal could change the microclimate of grapevine growth, thereby causing complex effects on fruit composition. This study analyzed profiles volatiles in Cabernet Sauvignon (Vitis vinifera L.) grapes exposed to treatment at different phenological periods three continuous years. The treatments (leaf before flowering, after and veraison) were applied grapevines grown Yantai (Shandong, China). Berry samples harvested maturation determine chemical composition, including total soluble solids, phenols, volatiles. Leaf (particularly flowering) increase solids phenols (anthocyanins, flavonols, tartaric esters). Volatiles greatly changed years, flowering concentration amino acid-derived isoprene-derived compared with or veraison. research provides a basis for further optimizing aroma breeding vineyards.
